Chocolate pancakes recipe

It’s not always about infants and toddlers. Sometimes we need to treat ourselves too. Am not saying that the recipe am about to share is not good for kids, but this is something that the whole family can enjoy. Am talking about pancakes! If you like ordinary pancakes, then you will fall in love with chocolate pancakes. I discovered this recipe by accidents. My family loves lemon pancakes. So one morning, I discovered that the lemons I had were not fresh enough to use. I distaste flat pancakes. I thought to myself, what can I use to add a little taste and flavor with minimal effort and time? Then I just saw cocoa in front of my eyes and I was like, am going to use you! And I did! The chocolate pancakes were so soft, fluffy, and delicious that my hubby snatched my packed snack without telling me. You can imagine the disappointment I had in the office when I realized I didn’t have my sweet chocolate pancakes! I have not sorted this dispute by the way. He claims that he ensures that I have enough ingredients I the house to make these yummy pancakes! Anyway, let’s get down to business!

Ingredients

2 cups of self-rising flour

2 tbsp of sugar

½ cup of cocoa- (you can increase or reduced this as you like)

2 eggs

1 ½ cups of milk

¼ cup Cooking oil

Methods

In a bowl, combine flour, sugar and cocoa. Add beaten egg and milk and mix thoroughly to create a smooth batter. Heat the frying pan over medium heat. Add cooking oil and brush to distribute the oil evenly. Add ¼ cup measures of the batter into the pan and spread it evenly. When bubbles form on top flip over to cook the other side. You can add a little oil to ensure that it cooks evenly on the other side. When both sides are cooked, keep it in warm place. Follow the same method to cook the other pancakes. This recipe will make 12 pancakes. That’s enough for the whole family.

You can serve it plain if you like. For a 5 star treat or when you want to impress, you can spice it up with vanilla ice cream and chocolate sauce with fresh strawberry.

Chocolate pancakes is great breakfast, desert, brunch or healthy snack especially for school going children.

KEY NOTES

Self-rising flour gives makes the pancakes fluffy. If you use plan flour, be sure to add baking powder.
